For this one, we blended in just a 1/2 tsp of spirulina with soaked cashews, buckwheat, frozen banana, homemade almond milk, and... wait for it... frozen cauliflower! But that's not all. We also added a couple scoops of chia pudding that we made by mixing chia seeds with creamy homemade almond milk. Let us tell you, adding chia pudding to your smoothies is a total breakfast game changer! No longer do you have to choose between having chia pudding or a smoothie bowl for breakfast, because now you can have both in one delicious blend. We love the way the creamy chia pudding pairs with the smoothie, it's seriously so good!
And here is the little secret to get the most amazing swirly sky blue look for your smoothie! Here's what you do: first, divide your smoothie blend into two batches. Make the first batch without the blue spirulina and pour half of it into your jars. Then, add the blue spirulina to the second batch and mix it up before pouring it into the jars on top of the first layer. To really take it to the next level, we like to add chia pudding to the top and bottom of the smoothie.
Now, here's the fun part - to create those gorgeous harmonious swirls, take a spoon and gently stir the smoothie a couple of times to combine the colors and textures, but not too much that you can't see the different layers. - 2 tbsp chia seeds (heaping)
- 3/4 cups almond milk
- 1/2 cup buckwheat, soaked overnight and rinsed
- 1/2 cup cashews, soaked overnight and rinsed
- 1/2 cup frozen cauliflower (optional)
- 1 frozen banana
- 1/2 cup almond milk (plus more if desired)
- 1/2 tsp blue spirulina
Instructions for this magical recipe:
First, let's start by making the chia pudding. In a large bowl, combine chia seeds and milk and stir well. After 10 minutes, stir again to prevent any clumps from forming. Then, pop it in the fridge to absorb overnight, or at least for an hour.
Once you're ready to enjoy, take the chia pudding out of the fridge and give it a good stir to remove any clumps. If you prefer a thinner consistency, feel free to add a splash more milk. Then, divide the chia pudding into two jars and set them aside.
Next, it's time to make the smoothie! In a blender, combine soaked buckwheat and cashews, cauliflower, banana, almond milk, and blue spirulina. Blend it up until it's nice and smooth, then pour it into your jars with the chia pudding.
